Dish name – Tomato petal and goat’s cheese tartlet

Professional and home use
Blanch 3 mature tomatoes and cut each one into 4 wedges. Remove the seeds, ready to be filled with fresh goat’s cheese, mashed and emulsified with extra virgin olive oil. Add salt and pepper to taste. Lay out the 12 tomato wedges and fill them with the cheese. Wrap each of them firmly in transparent film and refrigerate for 2 h before serving. Garnish by sprinkling chives and salt flakes on top of each tartlet.
